Just curios about the carbing process for stouts at home. Does it work like any other beer, or is there a way to use nitrogen for that really creamy head?

You won't be able to get that creamy head without dedicated kegging equipment, a stout tap and 60/40 gas. Otherwise you can carb normally, it will still have a great head just not that super fine bubbles you are used to in a GuinnessPrimary: APA

Or you can buy a canning line and do the widget thing, like Guinness.
Or you can make a stout float. That gives a great, creamy head! It tastes AWESOME!
Otherwise, as DieBaas said, for the proper Guinness-like head, you will need toys. The gas is called SureMix and you can rent the kegs from Afrox and migas/mygas (can't remember). Note the "Rent", which usually makes it to expensive for occasional use.
