I have to brew as well. I found out that Devil's Peak bottles doesn't work well with an Emily capper, so a bunch of the bottles I capped and laid on their side under in the fridge squeezed their caps and leaked out all the beer. Yay.

Got a nice symphony of fermentation going with falsetto 34/70 on the pils and baritone kveik on the whiskey mash, thanks to different volumes of blow off receptacles . 1.044 and 1.092 OG respectively

Brewed my light lager this week. Had some time at home. Undershot my efficiency (I guess that'll come right with practice), so instead of ending up with 21l of beer like I had hoped, I ended up with just over 18l at 1.032. I'm also dialling in my hop bitterness now. I did a 45-minute boil, but because of the no-chill I did the timing as 60 and 30 minute additions, and not 45 and 15. Let's see how it turns out. Currently bubbling away happily at 15°C on some S-189.

^ You should practice a test brew with just water to calculate boil-off and volumes left after a drain, etc etc, so that you can input those values into your software. ... Its the only way to get your brews consistent 21L into FVThe Problem With The World Is That Everyone Is A Few Drinks Behind.!

Software...? :P I know I'm basically messing around now, and it's frustrating. I would love a ton more gear and stuff, but finances are tighter than ever before, so it's just frustrating. The whole no-chill thing is appealing, but also frustrating in itself as I can't measure the gravity immediately, I can't pitch the yeast immediately, etc. etc. It's a frustrating process. So far I'm just producing beers that aren't half bad for me, so I'm happy with what I'm doing now.
