  • Blood Orange and cranberry Ancient Mead

    I've been going through the HBT recipe database and I found this recipe: http://www.homebrewtalk.com/showthread.php?t=49106

    What is nice about it is that it is a dead simple mead that doesn't have any funny nutrient additions. Also it uses bread yeast hence the name Ancient Mead.

    When I was in Fruit and Veg I found 2kg of Honey on special and decided to make this recipe.

    Had blood oranges in the kitchen and couldn't find a small packet of raisins so I opted for cranberries.

    Washed and sanitized the orange and the cranberries, warmed up the honey so it is runny and added that in a 5L water container, added the orange and cranberries and filled the container with water up to the 4.5L mark. Added the bread yeast and is now slowly bubbling away.

            Beersmith give me an OG of 1.124 I have no idea what the attenuation will be. I'll measure it in about 4 months...

              26 days and it is still going strong. A bubble every 10 seconds or so.

                More than a month and still bubbling strong. Starting to think I have broken the laws of physics and have developed a perpetual CO2 farting concoction

                    Always wanted to try a mead. This looks like the one.

                    As one of the posters on that thread asked, Do you bottle carbonate the mead when it is done?

                      You could bottle carbonate, I'm not going to, haven't drunk a mead that was carbonated. Just bottle in 270mL kriek bottles with a tiny bit of sugar to have some CO2 on the mead

                          How did this come out ?

                          Looking to make a variation of it in the next couple of weeks. Thinking about doing something similar to this:

                          1.60 kg Honey (2.0 EBC)
                          1 pkgs Sweet Mead/Wine (White Labs #WLP720) Yeast
                          1.50 Cinnamon Stick
                          1.00 tspYeast Nutrient
                          1.50 Orange
                          1.50 Clove

                              Finally got round to making this. Used champagne yeast so hope it does not come out to dry.

                              Also used orange rind an just the juice from the oranges.

                              Added a bit of yeast nutrient.
