Maris Otter, my favourite base malt. Change my mind...

My order finally came in with some fresh Maris Otter. This malt smells amazing.

What would you do with a Maris Otter base malt? I feel like experimenting
    Primary: Bohemian Lager
Secondary: Bohemian lager/ Ale fusion - Added US-05 to secondary
    Next up: Bohemian Lager
    Then: Bohemian Lager
    And Then: Bohemian Lager
    Conditioning: Chucked Fruit Ale

I'll touch on the first part. Vienna is my favorite. With good old pale SAB as a second. I was really keen on trying Maris Otter but then just before ordering a bag I checked the price and realized I could literally brew 3x the beer using pale, Vienna and small amounts of specialty malts. While I dont brew to save money I still dont like to waste it

Maris is good, but there's no holy grail. I really am enjoying chateau pils from castle malting in my pilsners right now, and you'd be hard pressed to distinguish between maris or sab with a kg of vienna or munich in the grainbill, not even mentioning crystal or adjuncts or hops

I used maris for quite some time and do like it, its just base malt

I made a pumpkin beer with MO a while back. When mashing in, the smell of the MO was distinctly different to other base malts I've mashed before. It smelled great. Once I added the specialty hops though, it kinda faded away and was "just another base malt", so to speak. It's nice, yes, but like jannieverjaar said, it's expensive for a base malt and it makes it hard to justify.

I think its really good for SMaSH recipes. Let the MO and hops shine. Otherwise its a really good base malt.
