    Hi Guys,

    I'm looking for some advise. Im looking to clone Darling Bone Crusher Wit Beer (I love it).

    This is a base recipe im working with, I know I need coriander and Orange Peel, but the mouth feel is just not there:

    Additionally to the recipe above:
    Oasis water with gypsum and calcium
    Fermentation around 19-20c
    Yeast was actually from brew Africa there recommended WIT beer yeast.

    But I just dont get that same mouth feel, and tast is also not right. so any help would be epic.
    Any suggestions please.

    Do you have the original recipe?, otherwise you could be brewing this same "altered" recipe for 20yrs before you even get close

      Never had darlings wit beer, so have no idea on the taste.
      Did you add the coriander and orange peel ?, it will make a big difference on taste.
      I have had Hoegaarden wit and really enjoyed it.
      Made a wit September last year and came out quite good.

      This is how I did my coriander and orange peel.
      ----------------------------------------------
      10g coriander at 20 min
      10g coriander at 10 min
      50g orange peel at 10 min
      Prepare the orange peel several days before brewing.
      Boil orange peel for 15 min in 250 ml water add to jar and refrigerate.
      On brew day remove orange peel from jar (Leaving behind orange infused water) and add 10 min before end of boil.
      Put orange infused water in fridge.
      During secondary fermentation add the orange infused water.
      Everyone must beleive in something, I beleive I'll have another beer

        No just going off a Base WIT beer recipe.


        thanks @BeerHolic - I'll try changing how I add the orange peel and coriander. But I did add it in the boil.

          Hazy to cloudy pale yellow with a firm head. Aromas of spicy coriander, banana and clove. Candy-floss/bubblegum. Light citrus: bitter orange/lemon. Minimal hop aroma. Flavors are somewhat yeasty body, with minimal residual sweetness. The finish is dry but smooth. Tartness from bitter orange peel.

              Nope ... can't remember where I found that recipe ... was trying to help out the OP at the time.

                  I had a couple over the weekend.. not impressed. Hoegaarden is far superior

                    Had a few different Darling Brew beers, was not overly impressed.
                    I noted they stated Wheat malt, a proper Wit has a large quantity of flaked wheat.
                    So not sure if by wheat malt they meant flaked wheat.
                    Everyone must beleive in something, I beleive I'll have another beer

                      Flaked wheat adds more starch compared to malted wheat. Hence the cloudiness and mouthfeel.
