    How do I know when all the O2 is out of the keg? So after you've transferred from fermenter to keg and closed it all up, what pressure do you fill with CO2 and how many times do you burp it to release the O2?

    I do it once. O2 is lighter than CO2, so it floats on top. I pressurize to around 10PSI, let out gas until the gas starts stinging my nose (indicator of CO2) and then I'm done.

    I up it to the same pressure I will carb it at for the next 24hrs ... usually 30-40 psi

    I then do about 6 quick burps with a 10sec wait between burbs
