Schwarzbier, I used 5% Castle's Café malt instead of Chocolate and Carafa. Great beer with a simplified malt bill.

I value your experience more than your opinion - You could but you shouldn't - You should but I wouldn't - Time is on your side, never rush a beer - Have fun, its only beer - Don't believe all the crap you read on the www

Great looking beer. What yeast did you use? abv?

Its a tough style to get perfect, especially if you compare it to Westvleteren or Leffe.

I used the La Trappist from Liquidculture. I am currently drinking one and really enjoying it.

    I hit 1.050 and ended on 1.010.

Nope no coffee. I made a few tinktures and would have liked to compare it to Special W that Im getting next week.

I would describe coffee malt somewhere between Cara Munich iii and a light chocolate malt. Its has less caramel sweetness than CM iii with a very light roast note but will give you close to the same colour.
