    A weiss should not be sour.

    Tart, citrus is approprariate, but to a small degree.

    If all else fails, see if you can pretend it is a Berliner Weiss.

    I think you may need to revisit you cleaning techniques. I had to change my whole process a few weeks ago as well.

                I can't seem to get the beer attachment mod to work. . The picture uploader still works though

                  Morning chasps, here's a pic of my latest brew. Its a Best bitter based roughly on Bosuns, I'm very happy with the result, in fact the next brew I'm doing this again!

                            Darth Vader Black IPA, on the saddle of Devil's Peak.
                            Was hoping to crack the first bottle at the top, but the weather was rubbish. Beer was good though

                              Some new pics, my finished Witbier, based very roughly on a Hoegaarden clone recipe and my Oatmeal stout. The Witbier was a nightmare to sparge, but the final product is yummy. That stout is straight out the fermenter, I always do some QC before kegging for conditioning, its turned out really nice, even in that "raw" state.

                                Heres a pic of my IPA. Not excessively over hopped, won't appeal to hop heads but well balanced and very quaffable. I enjoyed this one, I just kegged another 50l for conditioning this morning
