    Did you add any nutrients? Or just your massive pitch?

    So its a 9L batch but I added a whole vile of liquid yeast which was sufficient - in the future I will always make a starter for a beer this size. I did however add nutrient it was highly recommended in the recipe.

    Yeah they are a bitch to get to finish dry so its not too sweet, with the relatively low IBU's its easy to muck up the rbr.

    Glad its been going so well, it may take a month to get the last few points but doubt it with your volumes. Have you started increasing temps yet?

    I was just thinking the opposite! Have you thought about fermenting lower and slower? Drop the temp 1c and see if its still going nuts

    So I raised temps as follows:
    Sat-Sun 18->19
    Sun-Mon 19->20
    Mon-Tues 20->21

    Was planning on leaving it to ride out the rest of fermentation at 21.

    On a side note I crashed the bock. FG was 1016 recipe aimed for 1017 so that works for me 7.7% beer. Its being fined at the moment will bottle Thursday or Friday and then condition for 3 weeks or so and then store at cold temps.

    Took 3 refractometer meter readings and adjusted seems like its sitting at 1015 already, I will now leave it in peace for a week or so, already 9.5%
