I think you could try it at low Temps. Then the Voss won't out compete to badly. Like 18 to 20C. Thats perfect for 05 but low for Voss. Could work.

Considering I'm in self-isolation, I think I have to brew a blonde or lager this weekend. I'm in the mood for something I can take and down. I've also got to bottle 40l of pale ale, so I've got something to keep me busy with.

    How's this:
    Grain bill:
    3.5kg pale malt
    200g CM I

    Hops:
    13g T90 @ 30 minutes for 19 IBUs total
8g Saaz at flameout for flavour

    Mash:
Mash @ 65C for a drier beer. Mashing probably for 45 minutes, although I'll test at 30 to confirm conversion.

    Ferment:
This is the one I'm not sure about. I've got plenty of S-04 which will probably do fine for this brew, but then again I also have a jar of S-189 that I can also use. That'll turn my blonde into a lager, which would be good with the Saaz in there.

    Ideas?

MMmm (creating vaccine .. ) Would something like 25% voss and 75% us05 exist -or will the Voss be more aggressive - veness of the voss just consume the us05? uu .. .you see ? .. too uch

I have found that US05 finishes quite dry with little body - hence my past posts about the fluffy mouthfeel issue.
I have done 3 brews with the voss and have found they all have that full 'voss' taste - which is nice but get too much quickly - bit like a tiramisu. All this of course my opinion. So, my thoughts 75% US05 with 25% voss for flavour. Think I'll make a Sierra Nevada PA again in the near future with that concoction.

First my mind is set for a saison. Looking for something different.

    My brew this coming weekend:

    45% Chateau Pilsen
    45% Chateau Vienna
    10% Crystal 25 EBC

    Mash 60 min @ 67C

    20g Brewer's Gold @ 60 min
    15g Brewer's Gold @ 15 min
    15g Brewer's Gold @ 5 min

    Ferment with US-05

Don't know if it technically counts as a blonde ale (due to the Belgian / Vienna malts)
